A Few Words About Me

Giving up chicken and fish was no big deal, but the cheese was the real kicker. I genuinely believe that I was addicted to cheese. That was until I saw What The Health on Netflix in 2017. If you have not seen the documentary, I highly recommend taking 90 minutes of your to watch. It was the catalyst to my giving up animal protein entirely, and after a few weeks, I was able to give up my addiction to cheese. Now I consider myself a vegan, and I am here to help others transition to plant-based foods or go completely vegan (there is a difference). Trust me; you will love the way you feel. Also, now I only eat to nourish my body. No more stress eating! I want organic fruits, legumes, whole grains, and vegetables to give my body the crucial nutrition it needs. On top of the health reasons, I am helping to save animals and the environment.

It's easier than you think!

But my story didn’t stop in 2017 when I transitioned to a whole-food plant-based diet… In May 2020, during the COVID-19 pandemic, my husband suffered a stroke. We were taking our morning walk with the puppies, and when we got home, I noticed that his words were jumbled, and he could not comprehend what I was saying. He was diagnosed with an Ischemic stroke which happens when blood flow through the artery that supplies oxygen-rich blood to the brain becomes blocked. His mobility was not affected, but he has Aphasia. In short, Aphasia is an impairment of language, affecting the production or comprehension of speech and the ability to read or write. The doctors have not completely pinned down the cause of the Stroke, and the cardiologist believes his heart issues caused it, and the neurologist believes his diabetes caused it. As my husband always says, “tomorrow is not promised,” so we are making lemonade out of lemons!

By the way, my husband does not eat a plant-based, but I am slowly incorporating more plant-based foods into his diet. I want to provide you with information on how to transition to a plant-based diet, easy recipes to enjoy, and keep you up to date on the ever-evolving changes in the Vegan World! Whatever your WHY is, better health, saving the animals, or the environment, we are all in this together!
